Originating from the high-mountain ecological tea gardens of Fujian, this tea thrives in an environment shrouded in mist and clouds with abundant rainfall. The fertile acidic red soil provides exceptional conditions for tea tree growth. The tea trees develop slowly in this pure natural setting, producing thick leaves rich in intrinsic compounds that form the foundation for Shou Mei 9371's unique aged character.
National Standard Craftsmanship, Heritage Technique
Strictly following the national standard requirements for Shou Mei tea production, we selectively harvest one bud with two to three leaves around the Grain Rain period. Using traditional withering and drying techniques, combined with precise fermentation control and slow baking, the tea retains its active components while gradually developing the distinctive aged aroma and honeyed charm characteristic of Shou Mei 9371.
Aged Sweetness with Complex Layers
The dry tea exhibits natural wrinkles with deep green and brown hues, emitting an elegant aged fragrance and subtle date sweetness. When brewed, the liquor displays a bright orange-yellow color. The taste is mellow and smooth, beginning with distinct date and honey notes, transitioning to emerging aged aromas in the middle phase, and finishing with gentle herbal notes and a lasting sweet aftertaste. The tea offers rich layers of flavor that remain enjoyable even after seven infusions.
Brewing Recommendations
We recommend using 100°C boiling water. Use 5g of tea leaves per 150ml of hot water, with a quick rinse for the first infusion. Start brewing from the second infusion with 30-second steeps. Ideal for brewing in Yixing teapots or gaiwans to appreciate its evolving layers. This tea improves with aging, developing enhanced character over time. It can also be enjoyed with dried tangerine peel for a unique flavor experience.
